It can be in an uncovered area, but you will need to use the cover. The one that it comes with will cover the entire island.
Could these set be against a wall ?
No, all of the venting and access is in the rear. You will need to give 5 inches of clearance for hood opening.
Can the arrangements of the cabinets be changed. I would need the sink to the far left and the grill to the far right
The beverage center ( sink/fridge) can be placed on the far left. This will require drilling holes for the attachment hardware since the burner cabinet is a end unit.
is it one connection for gas for the grill and the side searing unit?
Yes, you just need one connection. It splits internally to go to the grill and side burner.
if the cover that is included a full enclosure? from top to bottom? will it cover the faucet of the sink unit?
Yes, the cover comes in modular pieces that zip together to cover your entire island.

No, the openings between the burner unit and the grill go through the right side of the burner cabinet. It isn't finished on that side.

Can I add the 90° corner module to the right side of the grill to make this an L shaped ?

Because it sits on wheels and levelers, some sort of hard surface is best. Deck, paved or concrete works best. However we do have some installations that put concrete blocks under each wheel. Just sitting on grass or dirt is not advisable. Because it is on wheels, there will be enough room for drainage underneath. The wheel/leveler assemblies are 3 1/2 inches high, but only about an 1 1/2 is actually visible.

Can you swap the units ? My water for sink is on the left side of grill. And have natural gas so I'm assuming I could use the propane pull out for trash ?
Units can be swapped. Some easier than others.
The left burner unit really should stay to the left of the grill. There are openings between the two units and the gas and electrical lines that go between would need to be lengthened if the units were separated.
The beverage center (sink, fridge) could be moved to the left of the burner unit. Because that is not a standard configuration, you would need to drill the holes for the attachment hardware. It isn't hard and I've had many people do that.
You are correct about the propane pull out. Most who have NG use it for trash.

Each of the sections comes assembled.
When it arrives you will need to roll the sections into position and attach them with the included hardware.
